India’s Culinary Masters Face Off at ICF’s Pre-Event

The first day of the competition was held at the Institute of Bakery & Culinary Arts (IBCA), New Delhi, featuring the Master Chef Baker and Master Chef International Confectionery categories. Participants impressed the jury with their intricate craftsmanship, technical finesse, and artistic flair, transforming ingredients into edible works of art that reflected their individual culinary philosophies.

The next three days unfolded at the Banarsidas Chandiwala Institute of Hotel Management & Catering Technology, where the atmosphere was charged with anticipation and enthusiasm. The first of these days featured Master Chef North Indian Cuisine, Master Chef Indian Sweets, and Master Chef Butcher; the second day showcased Master Chef Kebabs, Master Chef International Cuisine, and Master Chef South/East/West Cuisine; while the final day celebrated the Master Chef Oriental Cuisine and Student Chef of the Year contests. Each round pushed the chefs to innovate and perfect their presentation, combining traditional flavors with modern techniques.

The competitions were judged by an esteemed panel of WACS-certified jury members, chaired by Chef Mahesh Kumar Sharma, Vice President of Shiv Vilas Jaipur, with Chef Bharat Khemani serving as the organizing secretary. Their experience, mentorship, and fair evaluation ensured that every dish was judged on merit, creativity, and technical excellence.

Speaking about the initiative, Chef Davinder Kumar, President of the Indian Culinary Forum, said, “The Annual Chef Awards and its competitions represent the heart and soul of India’s culinary excellence. Each year, we see extraordinary innovation, dedication, and artistry from chefs who continue to redefine the boundaries of gastronomy. These competitions not only celebrate talent but also nurture the next generation of culinary leaders. The Indian Culinary Forum has always believed in providing chefs with a platform where learning meets recognition, and this year’s participation reflects that spirit beautifully.”

The winners of these competitions will be felicitated at the Grand Chef Awards 2025, scheduled for October 13, 2025, at Hotel Ashok, New Delhi. The awards night will be a grand celebration of culinary brilliance, bringing together chefs, restaurateurs, food enthusiasts, and industry stalwarts to honor the best in the business.

Adding further, Chef Vivek Saggar, General Secretary of the Indian Culinary Forum, said, “Our aim is to create an ecosystem where chefs are encouraged to explore their creativity, challenge their limits, and evolve constantly. Every participant is a winner in their own right, as these competitions are as much about growth and learning as they are about recognition. The passion, precision, and perseverance displayed by our chefs truly embody the essence of Indian cuisine  diverse, innovative, and deeply rooted in culture.”

Established in 1987 in New Delhi, the Indian Culinary Forum (ICF) stands as India’s premier association of professional chefs, functioning as a non-profit organization exclusively committed to advancing the culinary art of India. The ICF acts as a bridge, a platform, and a catalyst for the growth and holistic development of the national community of chefs. The World Association of Cooks Societies (WACS) encompasses numerous professional chefs’ organizations worldwide, representing more than nine million professional chefs across 110 countries. The ICF embraces an international culinary perspective in the orchestration of its diverse competitions, seminars, and events. In a broader sense, the ICF seeks to encourage and inspire budding chefs through training and competition, elevate the global prestige of Indian cuisine, motivate Indian nationals to consider careers within the hospitality sector, champion Indian culinary traditions on the global stage, and nurture young chefs’ culinary skills through training, workshops, and competitions.

One Floor Down: A Speakeasy for the Bold, the Curious, and the Untamed

Bangalore,8th october 2025: Some doors stay closed. This one changes everything. Step in  One Floor Down. Beneath the warmth and familiarity of Helen’s Place lies its secret alter ego: a Dionysian speakeasy where masks hide faces, not intentions, and every cocktail is a confession waiting to be told.

One Floor Down_Colaba Peanut Crackers

Proclaiming itself as India’s First Dionysian Bar, One Floor Down is more manifesto than venue. Inspired by Nietzschean philosophy, it embraces chaos, instinct, and primal energy — the perfect counterpoint to the polite, Apollonian order of the world above. Here, rules are broken, whispers travel faster than the music, and guests become part of a living, breathing secret society.

Helen’s Rebellion

If Helen’s Place is comfort, One Floor Down is rebellion. It’s witty, seductive, and just dangerous enough. “There’s no joy in being ladylike,” declares its mission. “Here, women don’t follow the rhythm  they are the rhythm.”

Guarding the gates is Pablo, the enigmatic doorkeeper. Pablo doesn’t just check IDs; he decides if you belong. “Wondering who Pablo is? You’ll never see him move, yet somehow he’s always where the night needs him. Meet him, and you might just discover your hidden shenanigans.”

In a radical move, entry is strictly 27+ because, as the founders put it, “your brain finishes developing around 27, and wisdom pairs better with wine.”

Mischief in a Glass

At One Floor Down, cocktails are more than drinks they’re liquid stories. The Whisper begins softly with rum, banana, and tahini orgeat, while Second Smoke fuses mezcal, tequila, and caramel yoghurt with a promise: one puff, two bodies, no regrets.”

Other signatures Blindfolded (“you taste better in the dark”), That Lusty Night (“coffee, smoke, secrets at 2AM”), The Promise (vodka, tequila, chamoy, pickled grapes), and Encounter (“she left before the sun knew her name”) blur the line between poetry and provocation.

From the “Helen by North Stars” series comes Luna Moretti, a tribute to the woman who taught Helen bartending and kissing. With green tomato rum, tequila, jaggery, and citrus, it embodies rebellion in every sip. The most audacious? Gucci Noir Scotch with miso caramel, dangerous yet smooth, available in a whispered upgrade with Johnnie Walker Blue Label for INR 10,999.

The bar also reveres timeless classics like the Old Pal, Paper Plane, and Picante, served with obsessive precision.

Whispers on a Plate

Food carries the same mischief. Under the playful banner “Whispers on a Plate,” dishes arrive as secrets, confessions, and temptations. Tuna tartare puchkas with yuzu dill crème fraîche play street romance with high art, while Seared beef fillet ‘nahm tok’ arrives fiery and primal. From Scamorza truffle mushroom pops to Seared Atlantic scallops with corn and black bean, each plate deepens the Dionysian narrative rather than distracting from it.

House Rules of Mischief

Every night begins with a secret and a few rules.

  • Entry strictly 27+

  • Cameras taped at the door privacy is sacred

  • Patriarchy and misogyny? Left outside with the coats

  • Mischief encouraged, but clever mischief only

  • Coveted booths must be earned: out-drink, out-joke, out-dance the regulars

Play by the rules, and the night is yours.

New Kind of Freedom

One Floor Down is not chasing lists or whispers it’s mischief with unlimited funding. Created for those turning 30, tired of old lies, and ready for a new kind of freedom, the bar promises intimacy, rebellion, and nights that outlast the sunrise.

With its blend of philosophy, provocation, and perfection in craft, One Floor Down isn’t just a bar it’s Bangalore’s boldest reinvention of nightlife.

Sleep Better, Live Better: CoffeeTotaler Launches Colombian Supremo Decaf by Swiss Water Process

New Delhi,16 September 2025 – CoffeeTotaler, the brand putting swiss water process decaf on India’s coffee map, has launched its new variant, Colombian Supremo Decaf Coffee Beans — a luxurious cup of arabica bean that’s big on flavor, smooth on the palate, and no caffeine. The homegrown decaf-exclusive brand brings the world-renowned Swiss Water® Process to Indian consumers. For the first time, Indian coffee lovers can indulge in coffee without compromise — flavor, body, and depth intact.

COFFEETOTALER

CoffeeTotaler’s Colombian Supremo Decaf is sourced from the finest coffee-growing regions of Colombia and graded Supremo — the country’s highest classification for premium coffee. With large 17/18 screen size beans, it is carefully roasted to a medium-dark finish in our roastery, striking the perfect balance of sweetness and boldness. Notes of almond, milk chocolate, apple, citrus, blackberry, and a hint of black tea create a cup that is complex yet smooth. What makes it unique is the Swiss Water® Process. Unlike other decaf options available in India that rely on harsh solvents, Swiss Water® uses only water, temperature and time to gently wash away caffeine, preserving every layer of taste with a promise of 100% chemical-free decaffeination.

Founder Vikas Aggarwal quotes, “People often think decaf is a weaker version of coffee. That’s a myth we’re here to break. We believe decaf shouldn’t remain a niche choice. It’s time for the masses to embrace the idea of healthy coffee. We see a growing number of people looking for coffee that fits their health and lifestyle needs, from expecting mothers to those managing blood pressure, or simply anyone who doesn’t want to lose sleep over a late-night brew. With Swiss Water® Decaf, we’re offering India a safe, clean, and delicious way to enjoy coffee at any hour — with none of the jitters or crashes.”

Sourced ethically from Colombia, CoffeeTotaler’s decaf beans are roasted with versatility in mind. Low in acidity and gentle on the stomach, they combine the best of craft coffee with the assurance of health-friendly decaffeination.
